Ingredients You Will Need
For approximately 4 servings, you will need:
1 head of broccoli, cut into small florets
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
250 g cherry tomatoes, halved
1 zucchini, chopped into small pieces
1 onion, finely chopped
2 cloves of garlic, minced
1 tablespoon olive oil
½ teaspoon paprika
½ teaspoon dried Italian herbs
Salt and black pepper, to taste
100 to 150 ml vegetable broth or water
A small handful of grated cheese, optional
You can also add other vegetables such as mushrooms, spinach, green beans or cauliflower. The recipe is very flexible, which makes it perfect for using vegetables that are already available in your kitchen.
How to Make This Easy Vegetable Stew
Prepare the Vegetables
Begin by washing all the vegetables thoroughly.
Cut the broccoli into small, bite-sized florets. Try to keep the pieces relatively similar in size so that they cook evenly.
Dice the peppers and zucchini, halve the cherry tomatoes and finely chop the onion. Mince the garlic and set all the vegetables aside.
Preparing everything before you start cooking makes the process much easier and allows you to add the ingredients at the right time.
Sauté the Onion and Garlic
Heat the olive oil in a large skillet or deep pan over medium heat.
Add the chopped onion and cook for a few minutes until it begins to soften. Add the minced garlic and cook for another 30 seconds.
At this stage, your kitchen will already begin to smell delicious. The onion and garlic create a flavorful base for the entire vegetable stew.
Be careful not to burn the garlic, as it can become bitter. A short cooking time is enough.
